That was only a tech demo, and nothing else. It was never stated that it was going to be a new game. It's the same as the FF7 PS3 demo: a demo, but never intended to be a full game.

My belief is that the adapter remaps the Gamecube controller to work like a Wii U Pro controller. If that's how it is, then any game that uses to Pro controller could use this game.

As far as I remember, the coin count did not matter for the 3 star in Mario Kart 7. The only thing you have to make sure is that you stay at the top for a long time. Basically, you have to dominate the cup. The coins help, as they increase you speed, but they're not a must. I remember I completed a pair of cups in mirror mode without getting all coins in the four tracks.
