Quad Cores right now are really only useful for video or audio encoding/decoding. Most game benchmarks show Quad Cores performing on par or sometimes slightly worse than their Dual Core brethren. Once software, and especially games, start getting designed for multi-core systems we'll see better performance from our Quad Cores. So i would agree with you, right now most gamers don't need Quad Cores, and the most value lies in the Dual Core parts for now.
Crysis is very GPU intensive, and i'm not surprised that a 2.8 Dual Core can run it well, the main limiting factor is your video card. I'm guessing you're probably running a high end video card or an SLI or Crossfire setup, on the other hand maybe you're just running 800x600 resolution , no AA, no AF and low quality settings :P
People overclock to get more value out of their gear, it's not uncommon to get anywhere from 15% to 30% overclocks from CPUs and video cards. For e.g the E8500 from the article, comes stock at 3Ghz but you can easily overclock that to 3.6Ghz using the stock cooler, thats a 20% speed increase for free. I won't say no to that.
