Looks quite a bit sharper on PC but both look pretty good. I like watching these DF comparisons even if the game doesn't interest me, I can't really go bog standard racers.

The Dynamic Render Quality is a big one. Why they couldn't provide a more straightforward explanation of how it works, I don't know. This is one of the big reasons why many people believed that the game runs terribly at lower resolutions, because you'd expect to set everything at ultra in the settings, but the Render Quality settings correspond to specific resolutions.
Ultra forces the game to output at 4K, even if that's not the screen resolution, with High being 1440p, Medium 1080p, and Low 720p. Use these settings accordingly, and you'll see a huge FPS boost if you're not running at 4K. I got at least a 15 FPS boost by going down to High from Ultra.
