I like that Jill looks like she does in the Resident Evil 3 Remake, I wish Claire looked more like she does in the Resident Evil 2 Remake, that would of made more sense.

Sometimes we have to suspend believability for the sake of entertainment. In this case the age of the character do not matter, similar to how these characters are able to escape death-defying situations that would normally kill a regular person.
The Western mindset is very fixated on realism this is why concepts are done differently from Japanese. This is why many time the character design that comes from Japanese artist are really imaginative. They do not get bogged down of how realistically things function.

Ageing the character to her actually real age in looks would subliminally mean that she is getting old and we have to move on.
Old snake means an end of an era.
Older Dante means giving the reins to another character

An older Jill, Claire and Rebbeca would mean the same here. It would give that audience a timeline.

Nowadays I feel that Japanese designs are moving towards a more realistic Westernised style.
Maybe it got to do with the motion capture and having the same actor for both acting and voting.
If AI tech get more advance we could see both be separated where the actor just voices and the motion is of a different person.

Resident Evil has a somewhat realistic approach to it's universe, so this is a glaring flaw. It's not an anime.

Depends on which RE you are talking about. RE1 is not anime-y at all. Neither is 2. They both are very by-the-book B horror zombie flicks. They even sprinkle things in like Terminator references and Alien. Very westernized. RE Zero, RE6 and Code Veronica things start to get a bit anime-y indeed, despite still having some western references.

RE4 (original) is a cringe-y B action movie from the 80's that just happens to have monsters in it as well. You have the president's daughter, the action hero, the sexy spy, the international terrorists, etc. RE7 is basically Evil Dead, so not sure if you can call that anime-y either. RE5 takes itself too seriously to be anime-y as well, maybe Wesker and his megalomania could be considered that.

All animated movies, are basically CGI animes though.
And yes, RE fans are VERY vocal regarding the characters' appeareance, and this includes their age. If you missed the Claire in Revelations, Jill in Revelations, Claire's RE2 face reveal and Chris' RE7 debacles, you are a lucky bastard.
