Every character gets some love from in Crash Team Racing, even the more minor ones.
Online stats, and arcade progression stats would be good to have.
Custom loadouts is definitely a must imo.
I would also like if Time Trial mode lets you check your friends' best time on the tracks, adds to the competition as well.

Changeable stats: no. Leave the game meta alone. It's simplicity is it's brilliance.
Online career stats: I'd prefer a separate ranked mode. I don't need to see how many no-lifers are beating my times/win ratio. I would, however, like to see how I fair against friends.
The remaining suggestions are really good. Especially customisation loadouts.
