Well, you know, you may not like it but Destiny it's been influential, just look at Anthem (EA demanded for a Destiny clone)

Breath Of the Wild is gorgeous, but hasn't been all that influential, for one part... well, only Nintendo could do this.
and the game is just too recent
GTA V RDR definitely not influential, amazing games but is sticking to the exact formula that made Rockstar and the franchise successful, is only bigger better: you can argue that GTA3 and Vice City were the one's that really made their dent in the world.
