Actually, they do. According to everything I'm reading the Switch version is running 720p and 30fps...nearly half the frame rate and resolution of the PS4 version.
The Switch is too weak to run AAA third party games...it's just in luck that DOOM was already well optimized and DESIGNED to not be hard to run (hence the 1080/60 on PS4).
That and we have to keep in mind things like RAM and CPU speed in the Switch as well. Fortunately, DOOM isn't processor intensive or uses GPU physics and the like or else the Switch wouldn't stand a chance.
No, games like this are an exception to the rule.

Realistically, AAA games that can be run on the Switch that I expect to come out somedays are:
GTA V
South Park Fractured But Whole
Dark Soul 3
Resident Evil 7
The Evil Within 2
Fallout 4
Overwatch
Hopefully more will follow as well.
According to DF, this isn't going to be a common occurrence. Doom is kind of a special exception because of the scalability of id tech 6. They tested it, and it's amazing how low of hardware it'll run on PC. They matched Switch hardware as closely as possible, and it actually ran on the test PC. Pretty impressive, though they also stated they don't expect it too happen very often with other games.
