Having grown up with them I would have to say the impressive one for its time was more like Castlevania 2 Simon's quest for NES that was unbelievable for its time. However my mind was blown by the graphics and expecially the Fantastic 16-bit sound of Super Castlevania just that first level you're making your way to the bridge to enter the castle unbelievable

Simon's quest kinda did with Castlevania what Metroid did with SF games on the NES, yes; The atmosphere and the graphics and the sense of isolation, while not quite on Metroid's level, was impressive for its time. I never understood why Simon's quest is regarded as being the black sheep in the Castlevania series, it was quite good and different from Castlevania 1 & 3.
Super Castlevania IV, however, was the first game that really made me fall in love with the series, some 5 or 6 years before Castlevania Symphony of the Night (one of the very best videogame ever made in the whole history of videogames, period). But SC IV first, my god that first level with the fence that comes up, and the music, omg the music...

Castlevania 1 vs 4, definitely 4.

Castlevania 3 vs 4, I'd go with 3.

Horror titles are no exception, with the recent Resident Evil, Dead Space, and Silent Hill remakes.

Putting aside whether these remakes are necessary, most of them are excellent. They can expand and enrich the world with added details, improve gameplay mechanics, or put more focus on the story. Standard remakes will count, but story remakes or reimaginings will also be included.

If Castlevania is there as an Horror Game then Demon's Souls should be there as well.

Also, you might want to add Shadow of the Colossus there too. Where you play as a mass murdering genocidal maniac on a warpath.

Still get hyped in the very first level when that music slowly intros and kicks off.
