Why would Red have Espeon?

Espeon isn't a Gen 1 Pokemon.

It feels off, doesn't it? I think they simply wanted to showcase the Eevee line and they thought that Espeon, which is not one of the three "obvious" evolutions would be a good fit. I think replacing him with Lapras in the remakes and newer games of the series was a good move, given it's associated with Surfa and is a "unique" Pokémon.

Red used exclusively Pokemon that are either given to you or you need to encounter throughout the story of Yellow. Eevee is given as a gift in Celedon City so they figured he should have an eeveelution. He already had a fire and a water type, and Karen already had Umbreon, so it made sense to give him Espeon. I do feel that Lapras fits Red better, especially since Ash had one in the show, but Espeon makes sense, too.

Huh that makes perfect sense, I didn't realize Umbreon was already in Karen's team. Not repeating it would indeed be a very good reason to give him Umbreon instead. Nice catch Mr Magz
